We keep our bees in environments that are as organic as possible. Even so, every morning the bees fly several kilometers to new places, discover new flowers, and return to the hive to share what they have found with their sisters. Which flowers they favor, and what kinds of pollen and aromas they bring back—this is entirely up to the bees of each hive.
For this reason, even honey harvested from neighboring hives can have completely different flavors. That is why we choose to be a little cautious when using the term “organic” with our honey.
