A beautiful autumn day.
As the sun begins to reach the hives, lots of worker bees head out for the day.
We’ve been seeing more and more orange-colored pollen lately, so I think they’ve found the goldenrod.
This is their last big opportunity to gather plenty of nectar and pollen before winter.
Will they be able to raise enough “winter bees” to carry the colony through the cold months?
We’re watching closely, holding our breath.
Goldenrod honey has quite a distinctive aroma and flavor, with a little twist to it, so we leave all of it for the bees as part of their winter stores.

Someone who purchased BeeCamp honey recently asked us:
“Besides enjoying the difference between spring and summer honey,
and enjoying the aroma and flavor of pure, raw honey,
what are some other good ways to enjoy it?”
So here are a few ideas.
Drizzle it over toast or yogurt.
Add it to black tea or herbal tea after letting the tea cool down a little.
Those are the classics.
You can also mix it into a salad dressing,
use it as a finishing touch for grilled chicken or fish,
or drizzle it over cheese.
Those are pretty Good, too.
Before heading to the gym or going for a walk,
or at night when you’re feeling a little peckish,
a spoonful of honey.
That’s pretty wonderful, too.
And honey drizzled over almonds or other nuts? Absolutely.
For rehydrating after working up a sweat:
Try mixing honey and freshly chopped ginger with soda water.
Since honey doesn’t dissolve very easily in water,
it’s really convenient to make a batch of ginger preserved in honey ahead of time.
Another option:
Dissolve some honey in lukewarm water,
squeeze in some lemon, sudachi, or other citrus,
add a little salt,
and pour it into your water bottle.
Then add water until you get the strength you like.
Have that waiting for you,
and you—and even your skin—will feel happily rehydrated.
Of course, you can also use honey instead of sugar when cooking something in a frying pan or pot.
But when you think about all the wonderful qualities and aromas of raw honey,
it seems just a little bit of a shame to heat it up and lose some of that character.
